Growing awareness of the health benefits of a plant-based diet has spawned vegetarian restaurants in the United States. With diverse influences, innovative twists, and world-class preparations, today's vegan menu is much more than just a salad. There's never been a better time to go meatless in America. Plant-based burgers achieve the impossible. People have figured out how to make amazing sushi out of eggplant and tofu. They are making progress with lab-grown meat, although its vegetarian status is certainly debatable. Additionally, and perhaps most importantly, these 10 plant-based restaurants are not only great examples of vegan and vegetarian cuisine, but they are also top restaurants.
